Energy Cookies Recipe (The Snack For When You Have No Time To Eat)

Blueberry Energy Cookies 

There are some days that I'm so rushed off my feet that I just don't have time to eat. Those days make me very sad, firstly because I LOVE FOOD, but also because I know it isn't healthy for my body. 

I promise you that these type of days don't happen too often, but when they do, I can get so craggy and tired and that really affects my work. 

When I know that I have one of those days coming up, then I've started reaching for these energy cookies. The great thing about these is that they give you a burst of energy when you most need it thanks to the bananas and oats, as well as also keeping you fuller for longer. 

Blueberry Energy Cookie mix

INGREDIENTS


2 ripe mashed bananas
200g whole rolled oats
250g any nut butter (I used crunchy peanut butter for this to give it some extra texture) 
60g chopped walnuts 
75g honey
1tsp vanilla extract
1/2 tsp ground cinnamon 
1/4 tsp salt
190g blueberries

METHOD


1. Preheat the oven to 160℃ (140℃ fan) and prepare two baking trays for the cookies. 

2.  Add everything into a large bowl and mix until combined. 

3. Scoop out the dough onto your baking trays in the desired size for your cookies. They won't grow much bigger when they bake so don't be afraid to go slightly bigger if you want!

4. Bake for 18-20 minutes until they are golden brown. 

5. Allow to cool before devouring!

This recipe honestly takes no time at all to make, and I normally end up with about a week's supply of cookies at the end of it if I had one each day. They make not look the prettiest, but boy do they help me out a lot!
