Chocolate Peanut Butter Cookies Recipe


The baking in my household is well underway during the lockdown, and I've been documenting what I've been baking so that I can share them with you on here! I always find that sweet treats make me feel better (when eaten in moderation obvs) and by baking my own it means I know exactly what's going into them. 

Today I have a chocolate peanut butter cookie recipe for you! I used to be allergic to peanuts, but I'm honestly so happy I grew out of it as I now love snacking on peanuts and peanut butter as long as I don't overload myself. 

Like my chocolate and banana bread recipe, this is nice and easy, but the results are absolutely fantastic!

Chocolate Peanut Butter Cookies Recipe

INGREDIENTS


2 tbsp unsalted butter, softened
2 tbsp granulated sugar
2 tbsp light brown sugar
2 eggs, beaten
1/2 tsp vanilla extract
2 tbsp peanut butter (crunchy or smooth, depending on the texture you want)
65g all-purpose flour
1/4 tsp baking soda
3 Reeses Pieces (optional, but I find they bulk out the dough really well)
30g chocolate chips of your choice

METHOD


1. Preheat the oven to 180C (160C fan) and make sure you have your lined or greased baking tray ready. 

2. In a medium-sized bowl, whisk the butter and sugars together until they are combined. Then whisk in the eggs and vanilla extract.

3. Stir in the rest of your ingredients (peanut butter, flour, baking soda, Reeses Pieces and chocolate chips). 

4. Scoop the dough onto your baking tray (this should make about 8 or so depending on what size you make your cookies). Bake for 16-18 minutes.
