Chocolate & Banana Loaf Recipe



It seems like everyone and their dog is baking banana bread at the moment. "But why?!" I hear you cry! Is it because everyone stock-piled bananas and now they're stuck with loads that are too ripe to eat? Who knows, but I can tell you that it's one of the easiest cake loaf recipes for anyone to have in their repertoire. 

I unknowingly jumped on the bandwagon a couple of months ago before the lockdown, when I was going through my recipes and highlighting the ones I wanted to make. This one caught my eye, and as I hadn't made this old favourite in a long while, I added it to the list to make. 

So now, here I am: finally getting around to making it but I'm also joined by everyone else who seems to be making it too!

As I'm a chocoholic, mine obviously is a banana chocolate infusion, but as this is an easy recipe you can also add anything you want to it. Happy baking!


Chocolate & Banana Loaf Recipe

INGREDIENTS 


100g salted butter
175g caster sugar
Vanilla essence
2 eggs
225g self-raising flour
1 teaspoon baking powder
A pinch of salt
100g chocolate chips
2 mashed ripened bananas
2 tablespoons milk

METHOD


1. Preheat the oven to 180C (or around 160C fan). Pop in your bananas if they're not ripe yet for about 5 mins. Grease a good-sized loaf tin and leave to one side.

2. Leave the butter to soften for a while before you make this (or pop it on the microwave for 10-second bursts if you're short on time), and then cream the softened butter with the sugar.

3. Next, add the eggs (with a little of the flour to stop the egg curdling) and a couple of drops of vanilla essence and beat until combined.

4. Fold in the dry ingredients (flour, baking powder, salt and chocolate chips) but be careful not to overmix, then add the mashed banana and milk – slowly folding a couple of times. I add the ingredients in one at a time, then fold a few times just to make the combining process easier. 

5. Pour the mix into the greased loaf tin and place on the middle shelf of the oven to cook for around 45 minutes to an hour. The top should be golden, and a knife poked into the centre at a diagonal angle should come out clean when the loaf is ready. If you find the top is cooking quicker than the middle, cover with foil to stop the top from burning. 

6. Leave the banana loaf to cool before gently easing out of the tin. Enjoy by itself or if you feel like it needs a bit more moisture then spread on some jam or your favourite flavoured spread/butter.
