Chocolate Brownie Recipe with Delicious Alchemy

As a foodie, I’m all about trying new recipes and cooking techniques. One that I haven’t really got into yet are packet mixes, mainly because my mum brought me up with a very DIY approach to life; cooking from scratch, using what ingredients you have in the fridge to create something amazing, waste not want not etc etc etc. But I’m always up for a challenge, so when Delicious Alchemy sent me some packet mixes to try, I thought…why not?! Especially when one of them was to make chocolate brownies…mmm, chocolate brownies…

Delicious Alchemy are an award-winning company who are dedicated to creating yummy gluten free food. I’m not gluten intolerant, but I have tried gluten free food in the past (some of which have tasted ah-mazing). One problem with gluten free food is that you sometimes have to sacrifice the taste and texture of your favourite food so that you can eat it, which isn’t really fair. But companies are recognising this problem and are trying to create gluten free food that is up there with the original, like Delicious Alchemy

We followed the recipe on the packaging to make the brownies, so let’s see how they turned out!

INGREDIENTS
2 large eggs
100g unsalted butter

  1. Preheat the oven at 180°C (160°C for fan ovens). Line the base and sides of a 20cm (8 inch) square tin with greaseproof paper. Make sure the paper sticks out 2.5cm (about an inch) above the rim of the tin. 
  2. Add the brownie mix to a bowl. Melt the butter and pour over the brownie mixture. Stir until the mix is starting to form a batter. 
  3. Lightly beat the eggs, add to the mixture and stir together well. 
  4. Spread the batter into the tin and smooth the top. Bake for 18-22 mins (We kept ours in for around 25-30 mins to get a crunchy top and a gooey centre).
  5. Leave to cool in the tin for 20 mins before transferring to a cooling rack. Leave to cool completely before slicing.

The end result…
Our brownies came out incredibly crumbly (as you can see from the photo above)! I would suggest putting it straight onto a plate after cooling in the tin to catch any crumbs. It did create a beautiful texture, with a beautiful crunchy outside and gooey middle. It tasted amazing, if a little grainy. It did taste like gluten free food, but it wouldn't put me off making it again! And with so few ingredients needed, and a mixture so easy to make, you'd be a fool not to try it!
